Ingredients
4 cups water
1 cinnamon stick
6 whole cardamom pods
6 whole cloves
5cm fresh ginger root, roughly chopped
1 cup whole milk
4 rooibus tea bags (supermarket)
4 teaspoons honey
Fresh mint (optional)
Method
In a saucepan combine water, cinnamon, cardamom pods, cloves and ginger root.
Lightly simmer for 5 mins and then add the rooibus tea and milk.
Bring to the boil and immediately remove from heat.
Add mint and cover for a few minutes to infuse. Strain and sieve the masala chai and add raw honey to sweeten.
Masala chai is a warming, nurturing and feminine tea with robust flavours. The spices can aid in digestion and prepare the body for sleep. Enjoy after a long and stressful day.
